Introduction: Chickpea Salad Sandwich

This recipe was developed when I was trying to find a Vegan option for tuna salad. I mixed a few recipes and added a little of this and a little of that. It doesn’t taste anything like tuna salad. Instead I created a yummy, slightly tangy sandwich!

As you can tell, this recipe is not an exact science. Like with most of my recipes, it is made through trial and error, until I got the flavor I wanted. So, if you like things a little less garlicky, by all means, use less garlic! Add more onion! Whatever suits your taste buds. This is your sandwich!

Supplies

Ingredients (makes about 8 sandwiches):

Note: This recipe requires a food processor.

For the filling:

2 - 3 carrots, shredded

2 cans chickpeas/ garbanzo beans

1 Tbsp dry mustard

2 Tbsp apple cider vinegar

1 Tbsp sugar

1 ½ tsp paprika

3 tsp minced garlic

Salt & Pepper to taste

½ - 1 C vegan mayonnaise

4 green onions, chopped

For the sandwich:

Tomato Slices

Fresh spinach and/or your favorite lettuce

Your favorite bread

Step 1: Important Notes

Before we get started, first and foremost: Chickpeas and Garbanzo beans are the same thing! I say this because I remember hunting for garbanzo beans - going to store after store, never being able to find them. Until I ran into a store clerk who was able to enlighten me… Chickpeas are garbanzo beans!

Step 2: Start the Process

Drain the Chickpeas. Add them & the shredded carrots to food processor. Process on medium for just a couple seconds, until slightly chunky.

Step 3: Add More Ingredients

Add dry mustard, vinegar, sugar, paprika, garlic, salt & pepper. Process quickly, just enough to blend.

Step 4: Final Additions

Add green onions and ½ C of vegan mayo. Process until blended. Keep adding mayo until you achieve desired consistency.

Step 5: Make Your Sandwich!

For sandwich: Spread a little additional mayo on your favorite bread. Add spinach, sliced tomatoes and a good helping of chick pea salad. Enjoy!
