Step 2: Separate and Melt

First let's preheat the oven to 325 F (162 C). Then separate your chocolate chips evenly. Melt one of the bowls of chocolate chips in the microwave or with a double boiler. If using the microwave, lower the power if possible to half or 7ish and set the time for 30 seconds then stir, then do it again, etc. until the chocolate is all melted. I sometimes will also just use the defrost setting as well, or just use the normal high setting. Chocolate can seize up on you so just be careful and take it slow while melting it. Set the melted chocolate aside for now.

Step 3: Cream That Butter and Sugar

Next place your softened butter, brown sugar, granulated sugar, and vanilla extract in a large bowl and using a mixer cream them all together for a minute or so. You can also wait to add the vanilla extract with the egg. Scrape down the sides of the bowl with a spatula as needed throughout this whole cookie dough making process.

Step 4: Egg and Mix

Next let's add in our egg and mix again.

Step 5: Mmm Chocolate

Now add in that melted chocolate and mix. Again, scraping down the sides of the bowl as needed.

Step 6: Sift the Dry Ingredients

Next, let's take a medium sized bowl and add a sifter to it. Place the flour, cocoa powder, salt, and baking soda in the sifter and sift away, combing the ingredients. If you don't have a sifter use a whisk. Sifters are great for breaking up cocoa powder clumps.

Step 7: Mix and Chocolate

Now mix in the dry ingredients with the batter, until just combined. Add in those remaining whole chocolate chips at this point. Use your mixer or a spoon to mix them in. Now just clean off those beaters, and the chocolate cookie dough is ready to go.

Step 8: Place and Bake

Next using a small ice cream scoop or two Tablespoons get out some dough and place on a silicone mat line or parchment paper lined baking sheet. Leave some room for them to spread. I can usually get 12 decent sized cookies on one sheet. Now bake them in the oven at 325 F (162 C) for 15 to 18 minutes. Notice the tops will have cracks in them. This is a what we want to see. After taking them out of the oven, let them sit for about 5 minutes before transferring them to a wire cookie rack to cool completely.

***Tip: If you want softer cookies, take the cookies out at 14 to 15 minutes, only let them cool on the cookie sheet for 2 minutes, then transfer them to the wired cookie racks.

Step 9: Serve Them Up!

Now if you like, you can sprinkle them with powdered sugar on top. Then enjoy! :)
