Introduction: Coffee Bean Biscuits

These buttery coffee-flavored cookies are shaped like cute coffee beans.

If you're stuck at home and looking for a quick baking project, they don't take a lot of ingredients to make so let's get started!

Step 1: Ingredients

Ingredients:

  • 120g Cake flour
  • 12g Cocoa powder
  • 25g Corn starch
  • 70g Icing Sugar
  • One egg yolk
  • 75g unsalted room temp butter

  • a splash of hot water (about 6g)

  • 5g Instant coffee powder

*Note: the corn starch is super helpful for making the cookie soft and allowing it to hold its shape during baking!

Step 2: Make the Coffee

Take your instant coffee and add a small splash of hot water. We're looking to have a concentrated coffee mixture that won't water down our dough.

Step 3: Cream Together Your Butter and Sugar

Step 4: Add Your Egg Yolk

Step 5: Add Coffee to the Mix

Pour slowly to ensure that the wet mixture doesn't get too watered down.

Step 6: Sift in Your Dry Ingredients

To the creamed butter add your flour, corn starch, and cocoa. Mix until you get a ball of dough. It shouldn't be too sticky.

Step 7: Shape the Cookies

Prepare a lined baking sheet with parchment paper.

I used a scale to measure out 10g balls of cookie dough and rolled them into ovals.

Take the back of a knife or a dough scraper-- anything with a 1mm thickness-- and press it into the ovals to get your coffee bean shapes.

Step 8: Chill the Shaped Cookies for Half an Hour

In the freezer, they can chill for a shorter amount of time.

Step 9: Preheat Your Oven and Bake

After they've been chilled, preheat to 140 degrees Celsius or 280 degrees Fahrenheit and bake the cookies for 15-20 minutes.

Step 10: Enjoy Your Cookies!

I had mine with the TikTok trending dalgona coffee for a double caffeine boost :)

These cookies would go nicely with a glass of cold milk or a cup of hot tea for an afternoon snack.
