Introduction: Marinated Steak - Flank - With Cucumber Aioli

Flank steak is a flavorful and inexpensive cut of meat. Unfortunately, flank steak can be tough if not prepared properly. In this Instructable, we will use a spicy marinade made from cucumber, oil, and egg called cucumber aioli to help tenderize the meat and then grill the marinated steak to perfection.

Ingredients:

  • 1 1/2 to 2 pound flank steak
  • 1 jalapeno pepper chopped and seeded
  • 2 cloves of garlic
  • 1 egg yolk
  • 1/2 cup parsley
  • 1 cucumber
  • 2 tsp salt
  • 1 tbsp fresh ground black pepper
  • 1 cup extra virgin olive oil
  • 2 tbsp Worcestershire sauce (optional)

Step 1: Prep Aioli

Slice the cucumber and then roughly chop the parsley. Yoke 1 egg and measure out 1 cup of olive oil. Peel the garlic.

Step 2: Mix and Emulsify

Place the garlic, cucumber, salt, pepper, parsley, egg, Worcestershire sauce (if desired), and jalapeno in a blender. Blend until liquefied. Slowly add olive oil (about 1/4 cup at a time should be okay) until the mixture emulsifies.

Step 3: Prepare Steak and Marinade

Make 1/4 inch deep cuts about 1 inch apart on both sides of the flank steak. Place flank steak in a large plastic zipper bag and pour in marinade. Marinate for 8-24 hours.

Step 4: Grill

Coat a disposable grill liner with cooking spray and heat grill to high heat. Remove flank steak from marinade and place on grill for 8-10 minutes, flipping the steak every minute. This should result in a rare to medium rare steak.

Step 5: Serve and Enjoy Marinated Steak!

After letting the steak rest under foil for 5-10 minutes, slice against the grain and serve. We served ours with pomme frites and brussels sprouts with honey almond glaze. Enjoy!
