Step 2: Cream Butter With the Sugars

Preheat the oven to 350 F/176 C. In a large bowl add the softened butter and brown and granulated sugars. Then using a hand mixer or stand mixer cream those ingredients together. You may use a very sturdy whisk or wooden spoon too if you like.

Step 3: Egg Substitute

Next, add in the vanilla extract, water, and oil. Cream those all together. The water and oil are part of the egg substitute. Usually, this recipe calls for 2 large eggs. The egg substitute I am using is (2 Tbsp. water, 1 tsp. oil, and 2 tsp. of baking powder for 1 egg) Since I need two eggs, I double those amounts.

Step 4: Dry Ingredients

Now in a separate bowl add the flour, baking powder, baking soda, and salt. Whisk those all together. You may use a sifter too if you like.

Step 5: Finish the Dough

Next, add about 1/3 of the flour mixture in the other bowl. Mix it in until just combined. Then add in the chocolate chips. Use your favorite kind of chocolate chips (semi-sweet, milk, dark, white). Mix those in. Then continue adding and mixing in the rest of the flour until it is all incorporated and you are left with nice eggless cookie dough. Scrape the sides of the bowl as needed throughout this process.

Step 6: Bake Those Cookies

Now using two Tablespoons you can scoop out some dough and place it on a cookie sheet or sheet pan lined with parchment paper or a silicone mat. Bake them in the oven one pan at a time for 8 to 14 minutes. The time will vary depending on the size of the cookies you make and how soft you want them. In my oven, 11 minutes was perfect. When they come out of the oven allow them to cool for about 5 minutes on the pan before placing them on a wire rack to cool completely.

Step 7: Serve Those Cookies

Look how nice and light golden brown the cookies are on the bottom. Time to serve them up! If you underbake them just a bit they will continue to cook a little bit while on the pan and produce a softer cookie. Or just bake them a bit longer for a nice crunchy cookie. So yummy! Enjoy. :)

*Note - Since these don't have eggs in them they don't remain as soft for as long, the texture will be slightly different, but still very yummy.
