GF Chocolate-Covered Cherry Cookies

Step 1: Gluten Free Chocolate Cherry Cookies: Cheap Enough for the Whole Family

Step 2:

First mix 1/2 C. butter with 3/4 C. sugar until its gets all creamy.

Step 3:

Then add a teaspoon of vanilla and 1 egg.

Step 4:

We put all of the dry ingredients in a separate bowl which includes 1-1/2 C. rice flour, 1 tsp. guar gum, a quarter teaspoon each of baking powder, baking soda, and salt, AND 1/2 C. cocoa powder.

Step 5:

After it's all mixed together, we roll the cookie dough into 1" balls and place them on an ungreased baking pan.

Step 6:

Then we press 1 drained maraschino cherry into each dough ball and bake them about 10-12 minutes at 350 degrees.

Step 7:

Mom likes to melt some chocolate with a little coconut oil and marschino cherry juice to pour on top of the cookies after they cool. And THIS time, she even baked some WITHOUT the cherries and sprinkled some MINT CHOCOLATE pieces on top. That was DEFINITELY a good idea, too.
