Want your family to go gluten free? Why not start with a little gluten free FUN! Nothing says fun like doughnuts, and this GLUTEN FREE doughnut recipe is cheap enough for the whole family! When it comes to yummy gluten free desserts, these GF doughnuts are the stuff!!!! Here's the recipe:
First we mix up all the dry ingredients which include...
2 C. rice flour 1/2 C. cornstarch 1/2 C. instant potato flakes 1 tsp. salt 2 tsp. guar gum 3 tsp. baking powder and...because they're doughnuts... 1/4 C. sugar 1 tsp. cinnamon and/or nutmeg
... and then we add...
2 eggs 1/2 C. melted butter 1/2 C. water
The batter will be stiff, so keep adding a little more water until the dough can be formed into a ball.
Now sure, we know you can BAKE doughnuts and we've DONE it with this batter, too, but OUR favorite way is to DEEP FRY them in coconut oil.
Place a dough ball in some hot coconut oil to test the temperature. It should float around a bit, but when it starts to look just a LITTLE golden, take it out and let it drain on a plate lined with paper towels (or on clean cardboard from the inside of a cereal box like we do).
Once you get the hang of it, you can fry several at a time and then... roll them in bowls of toppings like cinnamon sugar... powdered sugar... or even in frosting and sprinkles! After all, you're not eating doughnuts because you think they're healthy are you?!
