Introduction: Low Fat Oatmeal Cookies

i've modified this recipe several times and now I think it's as low in fat as It could be! firstly I've replaced white flour with almond meal, which seems to work quite nicely. And I've decreased the amount of sugar (I use organic raw sugar), and substituted butter with olive oil. All in all it tastes sweet and gilt-free.

You'll need:
1 cup organic rolled oats
3/4 cup almond meal (or finely grinned almonds)
1/2 desiccated coconut 
3 tbsp sugar
2 tbsp honey
1/4 olive oil
2 tsp baking soda
2 tbsp water
Optional:
sesame seeds
raisins
pumpkin seeds
nuts etc.

Step 1: Combine!

Preheat the oven to 180'C
Combine the oats, almond meal, sugar, coconut and other topping into a large bowel. Stir to combine.
In a microwave safe bowel place the honey, oil and water and microwave for 30 seconds on median heat just to loosen up the honey. mix to combine.
Then pour the honey into the oats and stir until it looks like cookie dough! Then all you need to do is to just spoon out the mixture onto a lined baking tray and bake for 5-15 minutes. 
It's that simple! allow them to cool, they will harden slightly after cooling, ENJOY!
