Every christmas I bake Christmas cakes with my mom. We usually use premade dough from supermarket, but this year I decided to make my favourite dessert-walnut rolls, basically from a scratch. It´s my very first time making a sourdough, so I wasn´t very confident in how it´s going to turn out. Keep your fingers crossed for me and let´s get to it!

Ingredients: Dough-250ml/8,5oz milk, 4tbs sugar, 20g/0,7oz yeast, 250g/6oz semi coarse flour, 250g/6oz fine flour, 100g/3oz caster sugar, pinch of salt, 200g/5,5oz butter, 2 egg yolks, 1 egg for coating before baking.

Filling-100ml/3,5oz milk, 3tbsp honey, 200g/5,5oz ground walnuts, 50g/0,75oz ground biscuits

Step 1: Dough

Pour sugar and yeast in lukewarm milk and let it work. After some time add flours, castersugar, salt, egg yolks, soft butter and make a smooth dough. Now let it sit in warm place for some time.

Step 2: Filling

Heat up the milk in a pot and mix in the honey. Than add wallnuts and boil for 2 minutes. Now add ground biscuits and let it cool down.

Step 3: Rolls

Roll the dough to about 3mm/1/8" and cut it to triangles with side 15cm/5/8" long. Cover them with a thin layer of butter and add the filling. Roll them tight and bend them to kind of "C" shape. Place them on baking tray with parchment paper, cover them with egg. and bake for about 20 minutes in oven set to 200 °C/400 F.
