Introduction: Peach & Vanilla Cake

Since I remember my mommy bakes this delicious cake for daddy in his Birthday.

We always make fun that daddy can eat half of the cake by himself (I bet you will understand better when you try it!) and it is not a joke, but he simply loves this cake! The secret is behind the freshness of the ingredients and the combination of flavors.

You will serve it cold so it will make this dessert a one in a kind cake! Enjoy!

Step 1: Ingredients

  • 250 grams Puf pastry
  • 1 pack of Vanilla custard powder
  • 500 ml Whipped cream
  • 4 pieces of peach halves in syrup
  • ½ cup of confectioners’ sugar

**Milk , water and sugar to prepare custard according to manufacturers instructions

Step 2: Roll the Pastry

Use a rolling pin to extend the pastry. Remember to use a bunch of flour in the table you are working so you can handle the pastry easily.

Step 3: Prick Pastry With a Fork

Place the pastry in a baking sheet. Prick pastry with a fork (this will avoid the pastry to get puffy)

Step 4: Bake Pastry

Bake pastry in the oven for around 15 minutes at 240° C.

Step 5: Prepare Vanilla Custard

Prepare vanilla custard according to instructions shown in the package.

In this case, I added 1 package of custard previously hydrated in 1/2 cup of water into 500ml of boiling milk. The clue is to stir constantly until it thickens.

Step 6: Cut Peach Halves in Slices

You will use peach slices as cake filler but also as decoration.

Step 7: Prepare Whipped Cream

Beat whipped cream and add sugar. Whipped cream will be ready when it looks smooth but thicken.

Step 8: Add Custard, Peach and Whipped Cream to Pastry

Add custard to the pastry, then add the peach slices and in the end add whipped cream. Keep cold in the refrigerator before serving.

Step 9: Serve and Enjoy

Serve this delicious cake and enjoy! Be ready to receive lots of compliments!
