Intro: Portobello Caprese

We love mushrooms, any kind!

A very quick and easy way to cook mushrooms is to fill the big portobello mushrooms. Be creative, you can fill them with anything; spinach, curd, cheese, avocado or like me, with a caprese filling.

Believe me, it's very little work!

And this I found in the internet: "The super-sized portobello mushrooms have a XXL effect on well-being. They promote night vision, alleviate iron deficiency and stress, strengthen bones, heart and blood vessels, and are ideal for women with children or while breastfeeding."

Step 1:

you need:
Portobello Mushrooms
Tomatoes
Mozzarella Cheese
Pesto
Parmesan, grated
some Rocket
Salt and Pepper

Step 2:

Clean the mushrooms carefully but not under the water, as they loose their taste and will be soaked full.
Remove the stems.
You can also remove the black inside of the mushroom if you wish, some say, they retain water.

Step 3:

Put the mushrooms into a greased ovenproof dish and put a slice of tomato onto them, than add some mozzarella and repeat. Season well, sprinkle with grated parmesan and add 1 tsp of Pesto.

Step 4:

Bake at 200 C for 20-30 minutes.

This can be a full meal or a starter.

    Great, I love everything caprece! I would leave out the parmesan though. It's already in the pesto and it kills the mozzarella flavour.

    I have passed them over at the store so many times because I don't know many ways to make them, this sounds really good, I would think a slice of Brie would go well with your creation.
    I especially like the idea of a soft cooked tomato.

    These mushrooms are perfect for fillings, try to fill them with a garlic-cream cheese filling and bake, or with spinach and cream cheese, or with Avocado
