Introduction: Red Coconut Chutney

This recipe is one of the most authentic side dish of Kerala. Yes, it is spicy and it is traditionally had with dishes like Dosa and Idly.

To have an Indo twist, Red coconut chutney which has a strong coconut flavor can surely be used. You can use it as a spread for Pizza or a pasta sauce. It will surely give an Indo flavor.

The main ingredient used here is Red chilly and coconut.

Step 1: Ingredients

To grind

Grated coconut - 1 cup

Small/pearl onion - 4, sliced

Chopped ginger - 1 tsp

Chilli powder - 1½ tsp

Water - 3-4 tbsp

Salt

For tempering

Small/pearl onion - 4 sliced finely

Mustard seeds - ½ tsp

Curry leaves

Oil - I used coconut oil

Step 2: Grind

Grind together coconut, small onion, ginger, chilli powder, salt with 3-4 tbsp water, to a smooth paste.

You can use your mixer or food processor.

Now it will combine to form a paste. there will be little coconut shreds. But that is fine.

Step 3: Saute

This step will impart great flavor to the chutney.

Heat oil in a deep pan. Crackle the mustard seeds. Add finely sliced small onion and curry leaves.

Step 4: Final Saute

When onion turns golden brown, add the ground coconut paste. Mix well.

To this add 1 cup of water.

Stir continuously until the steam comes through. Don't let it over boil. This would take around 5 minutes.

As you cook it the red color will appear more.

Be careful not to cook it on high heat. This may curdle your chutney. You can adjust the water consistency to get your desired thickness.

Use it as a spread for any of your dishes.
