Introduction: Savory Jasmine Rice & Bell Pepper

A quick, healthy and tasty dish for breakfast, lunch or dinner.

Step 1: Prepare Ingredients & Heat Stove

Prepare the following:

  • 2 bags (total of 17 oz.) cooked Uncle Ben's Jasmine Rice
  • 1 diced Sweet Bell Pepper (Yellow, Red or Orange)
  • 1/2 diced vidalia onion
  • 1 cup diced carrots
  • 1/2 to 3/4 lb. chopped deli turkey (Honey Mesquite)
  • 2 Tbsp. Butter
  • 4 Tbsp Honey Teriyaki (Tastefully Simple)

Heat a 2.5 to 3 quart pot on medium low heat (oven setting 4)

Step 2: Saute Carrots, Bell Pepper and Onion

Add about a tablespoon of extra virgin olive oil. First, saute carrots. Then after a few minutes add bell pepper in same pan. After a couple more minutes add onion. Stir frequently. Move to the next step when onion is translucent.

Step 3: Add Remaining Ingredients

Add in cooked rice and stir thoroughly. Then add butter and stir until completely mixed in. Add in teriyaki sauce (add to taste). Finally, add in chopped deli turkey. Mix until all ingredients are well blended.

Step 4: Enjoy!

Serve as is or on a heated flour tortilla.
