Introduction: Small Macaroons Recipe Fairly Simple, Easy to Make and Accessible to All

Ingredients (for 6 persons)

  • 150 g of butter
  • 6 egg whites
  • 150 g flour
  • 150 g of sugar
  • 1 tablespoon coffee extract.
  • 150 g Almond Powder
  • For The Macaroons:
  • 3 tablespoon of strong coffee
  • 85 g of sugar
  • 100 g of butter
  • 5 CL of water
  • 1 whole egg
  • 2 egg yolks

Step 1: Prepare the Cream

  1. Cut the butter in pieces and let it soften to ambient heat.
  2. During this time, pour the sugar in a saucepan, add water and bring to a boil over low heat by cleaning regularly the edges of the pan with a wet brush.
  3. Cook until you obtain syrup (a drop of hot syrup immersed in cold water and rolled between your fingers form a little ball).
  4. In A Bowl, whip the eggs. When they are sparkling, pour the syrup very slowly in net without ceasing whip. Keep whisking until the mixture is warm.
  5. Still at the whip, incorporate then coffee then the softened butter and continue to beat until perfect cooling of the cream. Refrigerate.

Step 2: Prepare the Macaroons

  1. Cut the butter in pieces and let it soften to ambient heat.
  2. In A Bowl, mix the flour, sugar, powdered almonds and the extract of coffee and then add the butter.
  3. Whisk the egg whites and add them little by little to the preparation. The dough obtained must be soft but not runny.
  4. Preheat the oven to 180°C.
  5. Cover a baking sheet with waxed paper. Butter it.
  6. Fill dough smooth pastry bag an inch in diameter. Make small piles of dough on the plate in the spacing of about 2 CM.
  7. By using a brush dipped in water, brush the surface of the small pile of dough by pressing lightly to flatten them.
  8. Put the plate and cook for 12 minutes.
  9. Upon exiting the oven, pour half a glass of cold water between the plate and the wax paper.
  10. Wait 3 minutes and then peel off the biscuits.
  11. Repeat the process until the exhaustion of the pulp.
  12. Let them cool down on a rack before the garnish.
  13. Place 1 C. Coffee Cream on the flat part of half the macaroons.
  14. Adjust top on the flat side of a biscuit no garnish.

Step 3: Variant

On the same model, realize the other macaroons with other flavors: for macaroons, replace the extract of coffee by of the extract of pistachio or vanilla, Cocoa Powder or raspberry syrup. For the cream, replace the coffee by the pulp of pistachios, Vanilla Extract, Cocoa Powder or finally of raspberry jam with seeds.
