Introduction: Smoked Turkey, Black Bean, Bell Pepper and Corn Salad

Smoked Turkey Black Bean Bell Pepper Corn Salad is an easy dinner idea in just 20 minutes. This meal is packed with antioxidants, minerals and vitamins.

Smoked Turkey Black Bean Bell Pepper Corn Salad contains,

It is low in fat, low in salt, high in fiber, and cholesterol-free.

All of this in just one cup of what is in this meal: Arugula. Its flavor has a peppery tang, along with mint, lemon juice, orange bell pepper and all the rest that is in this fast and simple meal idea…you can’t go wrong with preparing Smoked Turkey Black Bean Bell Pepper Corn Salad and eating it. Let's get started.

Step 1:

Here is our cutting board set up with the wonderful food items we will need.

Step 2:

Here we have on this side of the board 1 1/2 cups fresh corn kernels, 1 cup halved cherry tomatoes, 1 cup of diced orange bell peppers and 1/2 cup finely chopped red onion.

Step 3:

Over here we have 15.5 ounces black beans, rinsed and drained. That would be 1 can or if you like you can cook the black beans yourself.

Step 4:

Here is the Arugula we talked about at the on start of our instructions for this recipe. We will need 3 cups.

Step 5:

Now, let's grab that slice of smoked turkey from the cutting and dice it up. By the way it is about 2-inches thick and we want to dice it up to equal 3 cups or about 3/4 of a pound.

With a sharp knife cut the turkey breast meat in half. Then slice into 1 inch wide strips and then dice. As you are dicing fill up a bowl you have close by.

Step 6:

If you like you can weigh the meat to make sure you have 3/4 of a pound. Here you can see we cut 1 pound, which we will use. It is better to be over then under. Now let's get started to assemble our diced turkey with the other salad ingredients. 

Step 7:

Let's grab the corn, black beans and diced orange bell peppers and mix them together in a large salad bowl.

Step 8:

Next we well add the diced red onion.

Step 9:

And let's grab the 1 cup of halved cherry tomatoes. Just to let you know you, don't measure 1 cup with the tomatoes whole. Take about 12 cherry tomatoes and halve them to equal a cup. Now that you have grabbed the tomatoes, mix them as well.

Step 10:

Now let's add the diced smoked turkey and incorporate with the other ingredients. Look at the color of this salad. doesn't that look appealing to you? That is one of the secrets to good cooking is color. Taste and smell matter. But sight is also a sense.

Color is attractive to the human eye. Sometimes the sight of the food, before you smell it or taste it, can turn someone off from wanting to try the plated food. So always think about color in your plated food creation.

Now let's make the dressing for our Smoked Turkey, Black Bean, Bell Pepper and Corn Salad.

Step 11:

So here we have mixed in a small bowl 1 tablespoon of finely chopped garlic, 2 tablespoon of fresh lemon juice,1 tablespoon of balsamic vinegar and 1 tablespoon of olive oil. 

And over here we have 1/2 cup of tomato juice.

Step 12:

We also have here a package of organic mint.

Step 13:

Next let's take some mint from the package and (1) finely chop 1/2 cup. (2) Spoon it into a small jar, then add the (3) olive oil garlic mix and the (4) tomato juice.

Step 14:

Put the lid on the jar and give it a tight twist. Shake it up well to mix the flavors together. 

Step 15:

Pour over the vegetable meat mixture. It looks like the dressing could be a salsa, but it isn't. Now incorporate into the mixture. Doesn't that look grand. It sure smells awesome as well. 

Step 16:

Now get yourself some dinner plates and plate some arugula on each plate, about 4 plates will do. Then top with two spoon-fulls of vegetable meat mixture.

We will not mix the arugula into the salad bowl. That is done after the plate is fix as described above.

Step 17:

This main meal salad will take you 20 to 30 minutes. That includes washing and dicing up your vegetables. Dicing your meat and making the dressing and plating the salad.

After all of that here is what you have. Oh how delectable is that!! Wonderful mouth watering flavor.
