Introduction: THE BEST MACARONI AND CHEESE (MAC & CHEESE)

Step 1: BOIL

800g Macaroni

Add 1tbsp of salt to a large pot of boiling water. Add the macaroni and boil for 8 minutes. After 8 minutes, drain and rinse the pasta to stop the pasta from cooking.

Step 2: CHEESE SAUCE

113g Unsalted Butter

83g Plain Flour

1/4tsp Cayenne Pepper

1/4tsp Black Pepper

1/4tsp Salt

3tsp Mustard Powder

875ml Milk

1/2 Onion

2 Garlic Cloves

1/4tsp Fresh Nutmeg

500g Mature Cheddar

115g Cream Cheese

Crush the garlic cloves and add to a pot along with the milk and onion. Add the nutmeg and bring to a boil. Remove from the heat and leave the garlic and onion to steep for 10 minutes before removing from the milk. Melt the butter in a saucepan and add the flour followed by the salt, peppers and mustard powder. Cook for 1 minute before slowly incorporating the milk. Grate the cheese and add to the sauce along with the cream cheese.

Step 3: BAKE

Extra Mature Cheddar

Panko Breadcrumbs

Add the cheese sauce to the pasta and place in a baking dish. Add some extra cheese and breadcrumbs on top and bake at 220 degrees C / 428 degrees F for 20 - 25 minutes.
