Introduction: 오이김치(ooo-eee or Cucumber) Kimchi

Is there a good side dish that is spicy but healthy? In this instructable I am going to teach you how to make Korean 오이(cucumber) kimchi. I chose this because it is fresh, not too spicy, and one of the special type of kimchi and it is really simple.

    Step 1:

    Here are the things you need;

    • 1/4 cup of salt
    • 2 fresh cucumbers
    • 2 tablespoons of vinegar
    • 1 tablespoon of sugar
    • 1 tablespoon of chili powder

    Here are the things you can add while making cucumber kimchi ( optional);

    • cut 1 spring onion
    • 1minced Garlic

    Step 2: Fresh Start

    First, use the knife and cutting board to cut the edge of the cucumbers. Then cut the fresh cucumbers into small slices, and put all (except the top and bottom edge of the cucumbers) in the large bowl.

    Step 3: The Waiting Game...

    then get 1/4 cup of salt, spread it on the cucumbers, and Wait for 10 minutes

    Step 4: Remove the Saltiness

    After waiting for 10 minutes, add enough water and wash the cucumber, and then drain the water.

    Step 5: Mix It Up

    Finally, add 1 tablespoon of chili powder, 2 tablespoon of vinegar, 1 tablespoon of sugar, and 1 tablespoon of sesame oil. It is optional to add spring onion and garlic. Then mix it and wait for 2-3 hours.

    Step 6: Done!

    자잔 Ja-jan (it is an exclamation when you finished something)! The cucumber kimchi is done. A delicious traditional, and simple type of kimchi. It is healthy because it has high nutrients, so eat this for your good health. If you are not too much into spice, eat it in your meal or with rice.Enjoy!!
