I get Lyle's Golden Syrup from Amazon, who have it at a better price than my supermarket where it's sold in the foreign foods section (there are also youtube videos for making at home, it's easy.) Golden syrup is so much nicer than plain corn syrup; GS has a wonderful buttery taste to it that makes it a lovely choice for topping pancakes/waffles or using almost any way you'd use maple syrup. What a charming idea! If centering yolks is as important with quail as chicken eggs, I center them by letting eggs (at least 3 days old for easy peeling) sit in the cooking water for 2-3 hours before starting the boil process. This results in eggs that peel easily & have centered yolks with consistently thick whites which in turn makes for more attractive stuffed eggs. Thanks for your lovely recipe & photos!
