I think that I have a far simpler and more efficient way -- I soak them in a rather strong solution of caustic lye ( nasty stuff to be sure ) and then simply wash in cold water. The final cure is the same.
I have been making -- and eating -- these for years. After the brine I seal each one in a little bag with my vacuum machine. Works perfectly well
