series would double the voltage, that's not a good idea.
Even a rusted clamp can't be more time consuming than rigging cables to a second battery inside the car. Also, most people don't just have a second battery lying around. If a person isn't comfortable enough to remove a serpentine belt and unbolt an alternator, they're probably not going to be comfortable running jumper cables inside the passenger compartment to a completely unsecured battery on the floor.
If you changed anything on a future build, you could look at using pegboard on the back to help give it a little more ventilation on the internals. I saw a couple nightstands that had pegboard on the back of them and thought that was genius. I plan on doing a build following your guidelines this summer :)

Most permanent firepits don't use the dakota system because it requires a lot more hardware to keep water from flooding into your pipe/tunnel when it rains. Even if you put a sealing door on the intake side of the tunnel you'd have to somehow deal with sealing the exhaust side that the fire is drawing air from. A better solution perhaps would be to have a grate on legs that you can remove to occasionally clean ash and debris from.
