Great idea to set it up in such a way. I have not worked on it past the state it was in for this instructable. I'm coming in a bit late with my reply, so it's possible you've already moved on to another solution by now. It might be worthwhile to consider using a different distro. I don't recall which one seemed to have the latest and greatest Xournal, but I think there are several different flavors of Linux that are pi compatible.
