Oof, I overbaked them, went way past 175F. Should still be alright!
I took some years off of making this, but 2020 is ridiculous and needs pumpkin/sweet potato pie. This is the 10th time making this recipe. Using an electric hand mixer with a whisk attachments really let's you crank up the heat to cook off some moisture, whisking nearly constantly as steam pours off. It is also useful to cool the mixture faster by mixing in air. Again used the immersion blender to mix the two filling components together.
Expensive avocado oil? Can I recommend a bottle of Mother's Back to Black instead? It's all I use and it works on all trim colors.
9th consecutive year. Double recipe fills four 8" pie shells. This year I used a mixer with whisk attachments to get more moisture out of the pumpkin/sweet potato mix while running the burner at a higher temp.
