    While I agree that double frying is the way to go, I also have a problem with your temperatures. 400 degrees is too hot. Very few oils can withstand this heat and will begin smoking and breaking down into smaller chain molecules that will affect the taste. 375 is about the highest you should go. Also, you could fry them in duck or goose fat for extra richness.
