Hey Ilmora! I am SOO glad you liked it! As to cutting down the sugar, I can only think of finding naturally sweet mangoes. Or using a sugar substitute. It's essentially a dessert, and you should be able to use as much (or as little) sugar as you like! I don't think modulating the amount of sugar in this recipe would affect the gelling process that much. Good luck! :)
