Most butchers here, Texas, don't carry it. We didn't when I was a butcher but, we have a large enough Viet Namese population that a market that serves a Southeastern Asian community should have it. That's where I got mine when I wanted to make bacon.
I read this and showed it to my wife. If it's "niche", y'all are in the same one. We have an one bedroom house with a "sewing storage room" and a sewing room. Great idea, I see this in my future. As an aside, I think sewing machines get bored and breed while husbands aren't watching...
The butcher shop I work in makes chicken sausage. The texture of the sausage will be different from the pork sausage you're used to and the taste is a bit different. I prefer pork sausage but, chicken sausage is tasty. One suggestion if you do decide to make chicken sausage is to use ground thighs to keep the fat content up. Sausage made out of breast becomes too dry.
