  • Xylitol Crystal Candy - Tooth Friendly!

    Great recipe. I made the first batch as directed using a LorAnn mango flavor. It came out a little strong. Live and learn. The second batch I played a little, made a whole cup, left out the citric acid because the Ice Chips Peppermint label didn't indicate any acidic addition. I did it in an old Revereware (copper bottom) pot directly on the electric simmer burner after reading the decomposition temperature of xylitol is up around 600F. Got all the xylitol into liquid state, then monitored the temp using a remote IR thermometer until it got down close to the melting temperature. Then everything kinda went south-ish. I added a bit of peppermint oil and I think I ended up breathing most of it! The candy worked fine but is not as minty as the Ice Chips. I think it would have been IF I could …

I think it would have been IF I could find a way to seal the tray immediately after adding the oil. Another thought was to pre-mix the peppermint oil with a fixative of some sort, maybe vegetable oil or glycerin. I welcome any recommendations! Anyway, I'm letting another 1/2 cup of xylitol cool a bit right now before adding some LorAnn Strawberry flavor. Back to the tried-and-true. Well, almost. I don't have the patience for the double boiler, and frankly don't see the need with a direct read thermometer handy.

    I made your recipe using 16 drops of Lorann mango flavor - it was incredible! Aside from being a little TOO strongly fruity, it was at least as good as any of the commercial stuff. But I want to make a batch using peppermint oil, and don't want the tang of the citric acid. I ran across a recipe online that left out both the citric acid and the cream of tartar, and I'd like to try going without the citric acid but I'm wondering if I should leave the cream of tartar in. Thought I'd ask before I risk wasting some precious ingredients, what the cream of tartar does and whether its ok to leave it out too.

  • Off subject, but if you're bothered by a lot of ticks, buy one of the little kits that remove warts by freezing them. These will keep the tick from injecting you (vomiting into your blood) as you're pulling them off.
