Introduction: Afterburner Steaks
After using skirt steak in the last burrito video (http://bit.ly/1Gi7YfN) we had some left over pieces and wanted to see them off in the best way.
Afterburner steaks - cooked at extremely high heat over a charcoal chimney starter.
Basically these work great as a snack but if you can incorporate them into your BBQ preparations your guests can have a quick bite to eat whilst the other food is cooking - we just wouldn't leave a gap between these and cooking a whole brisket :-)
For our asian inspired rub we used
1 teaspoon sea salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon cardamom seeds (ground)
1/2 teaspoon ground cloves
+ Lemon infused rapeseed/canola oil
