Hi, friends!

Today I would like to share with you how to make a Mediterranean sauce Aioli or Allioli. It's a wonderful accompaniment for fish or shellfish, a dip for fries or cooked vegetables like artichokes, asparagus, carrots, etc... but no matter what you pair it with, this sauce is the star.

Let's start!

Time: 10 minutes

Step 1: Ingredients & Tools

  • 2 Garlic cloves
  • 200 Extra virgin olive oil
  • 1 Egg yolk
  • 1 Half lemon
  • Salt and Pepper, to taste
  • Grater
  • Whisk
  • Bowl

Step 2: Mash or Blend Garlic to a Paste With a Pinch of Salt

Step 3: Whisk Together Yolk, Garlic, Squeezed Lemon Juice, Salt and Pepper

Step 4: Method

Gradually add oil (a few drops at a time) to yolk mixture and whisk until smooth to make a thick mayonnaise-style sauce. When everything's come together it is ready to serve.

Put Aioli in a jar and keep in the fridge for up to 5 days.

    hi Penelope, i use around 150 ml olive oil. You can need a little more or less, it depends on the size of lemon and egg

    Thank you. For summertime we make BBQ Grilled Bread with Aioli for snacks. Yum-Yum!
