Introduction: Armadillo Eggs Appetizer
Armadillo eggs are luscious jalapeños, stuffed with a mixture of cheeses, all snuggled up with marinated chicken breast, wrapped up in bacon! Pure deliciousness!

Ingredients
Jalapeños
Bacon
Cheeses of choice
Marinaded chicken breast
(pounded flat)
Salt and pepper
Herbs and spices of choice
Heavy duty toothpicks or skewers
Hardware
Stove or grill
Jelly roll pan
Wire baking rack to (fit in jroll pan)
Knife
Cutting board
Step 2: Step 2: Prep Jalapeños
Step 2: Prep jalapeños
Wash jalapeños
Cut off stems
Slice in 1/2
Scoop seeds and cores from jalapeños
Soak in ice water 3-4 hours
(or overnight if preparing ahead of time)
Skip the ice bath if you like your peppers hot!
Step 3: Step 3: Fill Jalapeños

Drain, rinse and pat peppers dry
Fill with your choice of cheeses
(I chose a mixture of cream cheese, blue cheese and havarti)
Step 4: Step 4: Chicken
Step 4: Place marinaded, pounded flat chicken cutlet pieces on top of cheese stuffed jalapeños.
Step 5: Step 5: Bacon!
Step 5: Wrap the whole thing up in bacon!
Step 6: Step 6: Secure
Step 6: Secure with heavy duty toothpicks or skewers
Place on wire rack on top of jelly roll pan (cookie sheet)
Step 7: Step 7: Cook
Step 7: Place pan of "armadillo eggs" in preheated oven and let cook for about an hour or until an internal temperature of 190°f/87°c is achieved
Step 8: Step 8: Enjoy!
Step 8: Carefully remove pan from oven
Place warm appetizers in a pretty serving dish, serve with your favorite ranch or blue cheese dip and veggies!

When I make these I use ground pork instead of the chicken. Flatten a TBSP in your palm and add the jalapeno that is already full of the cheeses. Wrap up the sausage and then wrap in the bacon. It's a different flavor then with the chicken, but still tastes great.

I had to see if an Armadillo is part of this recipe, thankfully not. I live across from a wildlife sanctuary and they are nocturnal and like to forage for grubs in my yard. My Dachsund chases them off and it's amazing to see a prehistoric- looking critter move as fast as any cat can. ☺

Haha! No armadillos were harmed in making this recipe! Can't say that for bacon though! lol
