Introduction: Baked Chicken and Waffles
Chicken and waffles is my new favorite comfort food. It doesn't take too long to prepare and cook this recipe and the pay-off is so good.
Step 1: Ingredients
For this recipe you will need:
3 boneless chicken breast
For the breading:
4 c cornflakes
1 tsp cumin seed
1 tsp oregano
2 large egg whites
1/2 tsp cayenne powder
1 tsp basil
1/4 c buttermilk
1/2 tsp salt
1/2 tsp black pepper
1 tsp onion powder
1 tsp minced garlic
2 tsp thyme
For the waffles:
2 c flour
1 3/4 c milk
2 tbsp sugar
1/3 c vegetable oil
1 tsp salt
2 eggs
1 tbsp baking powder
1 tbsp honey
Step 2: Mix the Seasonings
Mix all of the seasonings (everything except the eggs, milk and cornflakes) in a bowl.
Step 3: Prep Your Chicken
Cut the chicken breast in half, length-wise.
Step 4: Eggs&Milk
Whisk the eggs and milk together.
Step 5: Crush Those Flakes!
Crush the cornflakes until it has the appearance of breadcrumbs. You can use a food processor on the pulse setting, or putting the flakes in a baggy and crushing them by hand.
Step 6: Assembly Line
Make an assembly line of your flour mixture, the egg wash and the breadcrumbs. One at a time, coat both sides of the chicken in each and then place the chicken on a baking tray that's been coated with non-stick cooking spray.
Step 7: Before Putting the Chicken in the Oven...
Spray the chicken with the non-stick cooking spray too.
Step 8: Bake!
Bake in the oven that's been preheated to 450° for 20 minutes.
Step 9: Make Those Waffles!
While the chicken is baking, it's time to start making the waffles.
Step 10: Mix Those Dry Ingredients
In a bowl, combine the baking powder, flour, sugar and salt.
Step 11: In Another Bowl..
Now in a separate bowl, mix the eggs, milk and oil together.
Step 12: Now Add Them Together.
Combine both bowls together and mix thoroughly. It's okay to have lumps in the mixture.
Step 13: Top It Off.
Add the honey and blend it in.
Step 14: Cook the Waffles
Using the manufacturer's guide for your waffle iron, preheat the iron and cook the waffle batter.
Step 15: 20 Minutes Is Up!
Remove the chicken from the oven.
Step 16: Enjoy!
Top with maple syrup and enjoy!

It is sad that quality fats are being replaced by low quality carbs (sugars). Spray fat? What are you trying to accomplish other than a carbo centric low-fat/bad fat diet?

I am from PA originally and lived near the Pennsylvania Dutch. They have a different take on Chicken and Waffles. Their chicken is made like a chicken noodle soup boiled chicken with a thickened chicken broth and then you make the waffle and put chicken in the middle with another waffle on top. Then add the chicken gravy all over it and eat in. Amazing how good that is.
