Introduction: Cauliflower Bake With Goat’s Cheese & Parma Ham

This dish was originally meant to be a
totally different dish! But I am sure you know that sometimes things go differently than planned, especially in the kitchen.

So a few months ago I was about to make some cauliflower patties. I tried a different recipe – where you don’t have to boil the cauliflower. Well, let me tell you, very soon I figured out that the recipe won’t work so I improvised! This is now my new favourite cauliflower dish!

Step 1: Ingredients:

500g Cauliflower

250g Carrot

1 Small onion

2 Table spoons Breadcrumbs

1 Egg

2 -3 Table spoons Fresh Flat leaf Parsley

Pinch of Salt & Pepper

Goat’s Cheese (or any kind of strong flavoured cheese – blue cheese)

Parma Ham (Prosciutto, Jamon)

Makes: 2 (main dish) or 4 (starter)

Time: 30 minutes + 10 -15 minutes in the oven (200 C)

Step 2: Method:

In a large bowl, grate the cauliflower & carrot.

Add breadcrumbs, egg (beaten), chopped onion, finely chopped parsley, salt & pepper and mix well.

Sauté in a pan until the vegetables are soft.

Place half of the mixture into a 20cm x 20cm oven proof dish (lined with tin foil), spread evenly and press down.

Add Parma ham (tear the slices into small pieces first) and Goat’s cheese pieces.

Cover with the rest of the vegetable mix and press down hard.

Bake in a preheated oven 10-15 minutes (200 C).

Serve with salad, bread or on its own!
