Introduction: Pork Back Ribs in Green Sauce (Costillas De Puerco En Salsa Verde)
This recipe is for Pork Back Ribs in green sauce. Uses Serrano peppers and Tomatillos.
2 Lbs. Pork Back Ribs
Half an Onion
1 Clove of Garlic
Salt ( As desired)
1/2 Lb. Tomatillo
5 Mexican Nopalitos
Step 1: The Ribs
Put one cup of water into a pot. Add the ribs and half an onion. Cover the pot, bring to a boil, then let simmer for about 20 minutes.
The point of only putting a pot of water is to have the ribs cook by steam. The water evaporates and cooks the ribs evenly that way. Stir ( turn ribs) them constantly. Add about 1-1.5 teaspoons at about 10 minutes. Add more or less if desired.
Step 2: The Green Sauce
Bring 3 cups of water to a boil. Bring down heat and add Serrano Peppers and the Green Tomatillo and leave on low heat for about 7 minutes. Adding more tomatillo equals less spicy. More peppers, more spicy.
After, blend the peppers and the tomatillo with the hot water with two teaspoons of salt( add more or less as desired). After its blended, strain the mixture to get rid of the coarse parts.
Step 3: Back to the Ribs
Drain the water from the pot and fry the ribs in a saucepan until they are brown.
Step 4: The Nopales
Cut the nopales into small thin strips.
Stir fry the nopales with very little oil and one clove of garlic and a little bit of onion. Add salt as desired.Make sure the saucepan is left uncovered and on very low heat. Stir often.
Once the nopales change from light green to a dark green, they are ready.
Step 5: Adding the Ingredients to the Ribs
Drain the ribs of the oil and add all of the nopales and add all of the sauce. Afterwards, let simmer on low heat for about 10 minutes with the lid on. Stir occasionally.
Step 6: Finished
Done! Serve with hot corn tortillas and enjoy!
