Introduction: Crépe Style Omelette
Hello,
in this Instructable I would like to show you how to make a five ingredient, banana split Omelette in less than ten minutes. This is a great alternative to pancakes and is an excellent source or protein.

Step 1: Ingredients
First gather your ingredients:
One whole banana
2 - 3 eggs
Approximately one teaspoon of cinnamon sugar or to taste.
Pinch of salt
One tablespoon water (not shown).
Oil or butter for frying.
You may replace the banana with any fruit (peaches, strawberries, apricots, blueberries, sliced apples,...) or make it savory with some shredded cheese and sliced mushrooms, or diced peppers with cheese. Be creative!
Step 2: Eggs, Salt and Water
Next crack your eggs and place them in a bowl or tall container. Sprinkle on a pinch of salt and pour in a tablespoon of water.
Step 3: Blend and Heat
Third you need to blend the mixture until it is smooth with no chunks of egg. I use Bamix immersion blender, I am sure that a fork would work just as well.
Meanwhile spread very little oil or butter on a crépe pan or a frying pan. Turn your stove top on medium-high and heat the pan until it is hot.
Step 4: Banana Split
Peel the banana and cut it lengthwise.
Step 5: Frying
Pour the egg mixture on the well heated pan. When the surface of the omelette creates a thin film, or skin, gently lay the sliced bananas as shown in the pictures. Sprinkle the cinnamon sugar on top.
Step 6: Fold
Once the sides of the Omelette start to dry out, gently fold the free side over the bananas. After a minute or two, flip the Omelette. Turn off the stove and let it fry for a minute longer. Finally slide your masterpiece onto a plate. Drizzle with your favorite syrup and top it off with some fresh fruit.
