Introduction: Creme Brullé

Creme Brullé is a creamy pudding with a brittle sugar top. Similar to ice on a pond the top will crack when tapped making for a delicious desert. The vanilla taste is and the caramelized sugar are mouthwatering, leaving you wanting more. With the sugar and a stencil a design can be burnt into it making for a visually pleasing and tasty snack.

Supplies

2 cups of heavy cream

1 teaspoon vanilla extract

1/8 teaspoon salt

5 egg yolks

1/2 cup s

Step 1: Step 1: Making the Mixture

Heat oven to 325 degrees. In a saucepan, combine cream, vanilla extract, salt and egg yolks then cook over low heat just until hot. Allow to sit for a few minutes.

Step 2: Step 2: Finishing the Mixture

In a bowl, beat yolks and sugar together until light. Stir about a quarter of the cream into this mixture, then pour sugar-egg mixture into cream and stir

Step 3: Step 3: Baking the Mixture

Pour into four 6-ounce ramekins and place ramekins in a baking dish; fill the dish with boiling water halfway up the sides of the dishes. Bake for 30 to 40 minutes, or until centers are barely set. Cool completely. Refrigerate for several hours and up to a couple of days.

Step 4: Step 4: Crystallizing the Top

Place template onto the top and sprinkle sugar into it. Carefully, remove template and use a blowtorch to crystallize the top and your design into the creme brullé.
