Introduction: Dairy Free Cinnamon Roll

For all the cinnamon roll lovers, here is a recipe I modified several times until I got the perfect one that is easy to make and delicious. While many recipies take 3 hours or more, with this one you'll have them ready in less than 2 hours. There are several good recipes but use butter, milk and even cream cheese. So if you are on a dairy free diet this is the one for you. It is so tasty that you can make it for you and even share with those that aren't avoiding dairy.

Step 1: Gather Your Ingredients

This recipe makes four dozens. But if you want less just make half.

For the dough:
7 Cups flour
2 Tbsp dry yeast
3 Cups warm water
6 Tbsp sugar
6 Tbsp oil
1 tsp salt
2 eggs

For the filling
1 cup sugar
4 Tbsp cinnamon
6 Tbsp coconut oil

Step 2: Activate the Yeast

Mix the sugar, the warm water and the yeast in a bowl, wait 10 min and you'll see foam.

Step 3: Make the Dough

In a different bowl mix the rest of the dry ingredients, add the mix of the first bowl and at the end add the eggs and oil.

You can use a mixer with a hook, or bread machine to mix everything. You can also mix it by hand.

You might have to add more flour depending if you live on a humid place. Just make sure your dough isn't dry or sticky.

Step 4: Let It Rise

Place the dough in a well greased bowl, cover with a clean kitchen towel, put it on a warm place and let it rise for 30 min.

It should double it size, then punch it down, and let it rise another 15 minutes.

Step 5: Here Comes the Fun Part

Roll out into a rectangle the size of your baking pan.
Spread coconut oil all over the rectangle.
Sprinkle sugar and cinnamon.
Here you can add other ingredients like pecans, raisins, dried cranberries, shredded coconut.
Beginning at the longest side, roll up dough.
Pinch the end to seal.
Cut into 12 slices.
Coat your baking pan with coconut oil, place cinnamon rolls, cover with the kitchen towel.
Turn on your oven (180 C) , while it warms up, place your cinnamon rolls in a warm place so they rise again. (15 min)
Bake for about 15 - 20 min.

Step 6: Enjoy

Now they are ready to eat!! Here is the last tip, for the glaze, I add maple syrup, it tastes amazing. The maple, cinnamon and coconut give this rolls the perfect flavour.
