Easy banana bread is a lovely Easter treat to serve for your family. It is good for sharing around the table, super moist and delicious. Vanilla cream topping makes it more festive!

I'm sure everyone will love a piece of moist and crunchy Easter banana bread. And it is a good way to use leftover brown spotted bananas and add veggies (carrots) to your picky toddler diet!


Supplies

2 eggs

½ cup vegetable oil

3 bananas ripe

¼ cup brown sugar

1 tsp vanilla powder or essence

¾ cup oat flour or quick oats

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

½ tsp ginger

¼ tsp nutmeg

1 ¼ cup whole wheat flour

2 big carrots shredded

½ cup walnuts chopped + extra for decoration

1 tbsp Vanilla cream powder for cake (I used Dr.Oetker)

1 cup milk of choice

1 tbsp dried carrots optional


Equipment:

  • bowl for mixing
  • 1 spatula
  • 1 Loaf pan
  • parchment paper
  • Oven
  • Whisk
  • fork
  • off-set spatula or spoon

Step 1: Make Banana Bread Batter

Mash banana with a fork, then in separate bowl whisk eggs and oil until foamy.

Add egg mixture to mashed banana.

Add wheat flour and oat flour, fold in with a spatula.

Add sugar, baking soda, baking powder, vanilla and spices. Mix until everything is incorporated.

Finally fold in grated carrots and walnuts.

Step 2: Bake the Bread

Add batter to the loaf pan, lined with parchment paper.

Bake 25-30 min in the oven, preheated to 190 C / 375 F, until inserted toothpick comes out clean.

Let it cool completely before removing from the pan.

Step 3: Make Topping

Whip milk with vanilla cake cream powder (according to instructions on the package).

Apply cream to the bread with an off-set spatula or back of the spoon.

Decorate with walnuts and dried carrots (optional).

You can also decorate with whipped cream cheese instead or drizzle with chocolate!


Step 4: Cut and Serve

Cut the bread into thick slices and serve for your family!
