Introduction: Easy Bread Pudding
Not to be confused with Bread and Butter Pudding I made in a previous Instructable. Another traditional bake which was known as "Poor Man's Pudding" as this too was inexpensive and used leftover or stale bread.
For this bake, you will need:
- 500g of whatever bread you have available to you. If your bread is fresh, see the next step
- 500ml of milk
- 200g of sultanas (or currants, dried cranberries, mixed dried fruit or raisins)
- 2 t-sp of mixed spice or ground cinnamon
- 2 eggs
- 100g melted butter
- 100g caster sugar (superfine sugar, but not powdered)
- 2 tb-sp brown sugar
- An 8" square tin or similar size pan, well greased
Step 1: If You Don't Have Stale Bread, Try This
This bake works better with dried or stale bread, but if you only have a fresh loaf, try this as I did.
I used cooling racks but you don't have to.
Spread out your bread (overnight if you like) and allow them to dry off some
I'd advise adding an extra slice to your 500g to account for the loss of moisture.

Step 2: Cut Up Bread
Pre-heat your oven to Gas #4 - conversion chart here
Cut or rip your bread into pieces and place in a mixing bowl
Step 3: Add Milk
Add the milk to the bowl.
I warmed my milk up to about body temperature
Allow to soak into the bread for about 15 minutes
Step 4: Add All Other Ingredients
Add all the other ingredients - don't forget to melt the butter first!
At first, use a spoon to mix it in then get your hands in there and squash it all together, through your fingers, whilst mixing. Yep, kid's will love this part!
Diabetic Option: I made some for a diabetic person who requested no added sugar at all, the feedback I received was positive.
Step 5: Pour Into Pan and Bake
Once mixed well, pour into your pan and, using your hand or back of a spoon, smooth out the top so it's flat.
Bake in the centre of your oven for 1hr and 10mins. Depending on your oven, you my not need that extra 10 mins so check after and hour.
Step 6: Cool
Once baked, leave in the pan or tin and allow to cool.
Sprinkle with some extra sugar whilst cooling if you wish.
Step 7: Enjoy
Top your bake off with custard, cream or whatever topping you desire
