Introduction: Gluten Free Chicken, Bacon, and Vegetable Soup

Chicken and bacon are combined to make a hearty soup that will warm you up on a cold day. With potatoes, carrots, celery, and onions, this can easily be a complete meal that can be made ahead of time. The flavors are delightful and it’s gluten free!

Ingredients:
16 ounces bacon cut into 1 inch pieces
1 cup chopped yellow onion
1 cup sliced celery
1 cup sliced carrots
2 cloves minced garlic
3 tablespoons corn starch
32 ounces chicken broth
2 cups peeled potatoes cut into 1 inch cubes
4 chicken thighs cut into 1 inch pieces
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup heavy cream
Diced green onions (optional)

Step 1:

Preheat oven to 225 degrees Fahrenheit.

Step 2:

Cut 16 ounces of bacon into one inch pieces. Place in a Dutch oven on medium high heat on the stovetop. Mmmm! Bacon! Did you know that people in Texas eat 19 percent more bacon than the national average?

Step 3:

Add one cup of chopped yellow onion.

Step 4:

Add one cup of sliced celery.

Step 5:

Add one cup of sliced carrots.

Step 6:

Add two cloves of minced garlic. Look at that fragrant steam. It’s already starting to smell delicious! Now, stir it until the onions become translucent.

Step 7:

Add 3 tablespoons of cornstarch and stir for three minutes.

Step 8:

Add 32 ounces of chicken broth to the Dutch oven. By this time, your tummy should be growling. But, you’ll have to temper your appetite; this soup needs time to simmer.

Step 9:

Add one teaspoon of salt.

Step 10:

Add one half of a teaspoon of ground black pepper. Don’t sneeze!

Step 11:

Add two cups of potatoes that have been peeled and cut into one inch cubes.

Step 12:

Add 4 chicken thighs that have been cut into one inch pieces. It’s almost oven time! Give it a good stir!

Step 13:

Put the lid on that bad boy and put it in the toasty pre-heated oven. Now go watch some soap operas for about 6 hours.

Step 14:

Whew! That was a lot of soap operas! You are probably very hungry from all that drama so add a cup of heavy cream to your soup and give it a good stir!

Step 15:

Feel free to garnish with some chopped green onions. Oh yeah, and there’s some tasty grilled cheese sandwiches but those are just to make the picture look pretty. Enjoy! Thanks for being awesome, fellow foodie.
