Introduction: Healthy Crock-pot Pepper Beef Wraps

A lot of my staple crock pot recipes are usually full of fat and carbs, so I decided I would try and take a healthier route. These wraps are great now that the weather is turning around. They can be stored for a picnic, packed for lunch, or served for dinner.

Now, top round doesn't usually sound healthy but consider that it's a good source of your B Vitamins, magnesium, protein, and iron. The produce additions contain a lovely dose of vitamins A and C, as well as some natural antioxidants. To finish it up, we load it with vegetables in a wrap form. This beef could also be served over rice, quinoa, pasta, or potatoes to stretch a budget.

Step 1: Ingredients

Our Ingredients are simple, you will need:

2 Onions, your preference, I used sweet yellow

2 Cloves Garlic

2 Bell Peppers

2 Cups Vegetable Broth

2 Pounds Beef Top Round

Preferred Spice Blend, I make a blend of spices containing dehydrated garlic, black peppercorn, pink peppercorn, rosemary, basil, onion powder, parsley, and sea salt.

It's also super easy to remember! Everything is in twos!

Step 2: Chop

You will want to chop your peppers and onions into fajita style slices, and mince your garlic. Set the pepper and garlic in a bowl to the side.

Step 3: Dry Rub

Take your spice blend, and generously rub it into all sides of your top round. I recommend that your top round reach room temperature before searing, but this is not required.

Preheat your skillet, with a small amount of olive oil, avocado oil, or butter.

Step 4: Crockpot

Add your onions to your vegetable broth in your crockpot, on the low setting.

Step 5: Sear

Sear your meat on all sides, till it is a crisp brown. This is to keep the flavor in your meat before it goes into the crockpot.

Step 6: Add Top Round

Place your top round into your onions and broth. Allow it to cook for 5-6 hours.

Step 7: Add Peppers

Break down your meat into large chunks and add your peppers and garlic. Cook for another two hours.

Step 8: Shred Beef

Using two forks, or a fork and a knife, shred the beef. Place it back in the pepper and onion broth so it can absorb the flavor.

Step 9: Veggies!

For the wrap, you will want to cut up your favorite produce. We used lettuce, tomato, avocado, and roasted red pepper. I made a spicy ranch style sauce ( I can add the recipe if anyone is interested).

Step 10: Wrap and Enjoy

Take all your toppings, beef, pepper, and onions, and load up your wrap. Drizzle with a healthy dose of your favorite sauce, and enjoy!

This meal is great for families, and a good way to sneak in those healthy veggies!
