Introduction: Hong Kong Mango Pancake

This mango pancake is more like a French crepe than the classic American pancake, but it is certainly just as delicious. Step 1: Ingredients

Ingredients:

240 ml milk

1/3 cup plain flour

1/4 cup corn starch

1/4 cup icing sugar

3 medium sized eggs, lightly beaten

10 g melted butter

2 ripe mangoes

1 can of whipping cream

Step 2: /Make the Pancakes

Pour the milk into a mixing bowl. Then sift the flour, corn starch, and icing sugar into the bowl. Mix well with a whisk until smooth. After that, Add the eggs and melted butter into the bowl. Mix well. Sift the mixture into a cup that has a pouring spout.
Heat up a non-stick pan on low to medium heat. Then pour out a small quantity of the batter onto the pan. Swirl the pan around to get the pancake into a nice circle. Once bubbles start to appear, take the pancake off the pan and onto a plate to cool. Repeat the steps until the batter has run out.

Step 3: Filling

I used whipping cream that you spray out from a can instead of making my own.

Cut a mango cheek. Then slice a rectangular piece out of it.

Step 4: Assembly

Place one pancake onto a plate. Then spray out some whipping cream from the can onto the pancake. After that, place the mango piece on top of the whipping cream. Now, fold the sides of the pancake inwards. Then fold the top and bottom ends in and flip it over, forming a pillow like shape. Ta-Da! You're finished!

(If you would like a firmer pillow, I suggest refrigerating it for 30 minutes before serving.)

You should make this because it is a tasty desert and a good treat for a special event. It is juicy, smooth and pure goodness. The process does not take long and it is easy to make.

You can also use other fruits instead of mango, like strawberry, kiwi, peach, durian. You should make this because it is delicious and it will fill your craving for fruits. Using homemade whipping cream is better than using whipping cream from a can. Do this because you can make it stiffer, which will hold the shape better.
