Introduction: How to Cook Kangaroo Fillets
Australia is one of the few countries that eat their coat of arms.
If you haven’t tried Kangaroo before you need to because it has a beautiful rich flavor and is extremely healthy.
Ingredients
- Kangaroo Fillets
- Rosemary
- Garlic
- Salt and Pepper
Step 1: To Start of You’ll Need Kangaroo Fillets.
Most supermarkets in Australia stock kangaroo and I know they export a lot overseas.
Step 2: To Season the Fillets We Need Bold Flavors.
Grate two cloves of garlic into the bowl. Kangaroo has a strong taste so it needs strong flavors.
Season freshly grounded black pepper and a pinch of salt.
Step 3: Add a Splash of Olive Oil to Help the Seasoning to Hold to the Kangaroo.
Mix the fillets into the seasoning.
Step 4: Setup of Your BBQ for Direct Grilling, You Want the BBQ Really Nice and Hot.
Place the fillets directly over the charcoal.
Cook for 3 to 4 minutes before flipping and cooking for another 3 to 4 minutes.
Kangaroo meat is very lean so you only want to cook it to rare or medium rare.
Once the fillets are seared on all side, take them off the heat.
Step 5: Tent With Foil for 4 to 5 Minutes.
Step 6: Slice the Fillets Before Serving on a Bed of Sweet Potato Mash With Beans.
There you have it! Kangaroo fillets.

game butcher in town selling emu and possum will have to give them a go, roo meat is great full of flavour and a lot cheaper than other meats just got to know how to cook it

FIRST you have to FIND SOMEONE who'll SELL you kangaroo meat. I tried to hunt my own, but the zoo told me to get the heck out. Stupid New Yorkers...
