Introduction: Indian Puffed Rice-Bhel Puri

This is the most commonly sold chaat in the streets of India. Bhel is a delectable combination of papadis, puffed rice, sev, onions, potatoes, raw mango and chutneys. The proportions of the various chutneys can be changed to adjust to your personal preferences. Toast the puffed rice to make bhel crisp before using it to make bhel. If you store the puffed rice, sev and papadi and refrigerate or freeze the chutneys, you can rustle up a heavy snack in a jiffy for your hungry kids returning from school.

Step 1: Ingredients

  • Puffed rice (kurmura/murmura) 2 cups
  • Sev 1/2 cup
  • Roasted masala chana dal 1/4 cup
  • Roasted peanuts 1/4 cup
  • Puris crisp 8
  • Onion 1
  • medium Potatoes 2
  • medium Green chillies 2-3
  • Salt to taste
  • Green chutney 1/4 cup
  • Tamarind chutney 1/2 cup
  • Garlic and red chilli
  • chutney 2 tablespoons
  • Lemon juice 1 teaspoon
  • Fresh coriander leaves bunch 1/4

Step 2: Method

Peel onion and chop finely. Clean coriander leaves, wash well and then chop finely. Boil potatoes, peel and cut into bite sized pieces. Wash, remove stem and finely chop green chillies.

Step 3: Add All

Combine puffed rice, onion, roasted chana dal, peanuts, potatoes, green chillies, half of the sev and toss well. Add four crushed puris and mix. Add salt to taste. Add the three chutneys as per your taste and mix well. Add lemon juice and mix

Step 4: See What You Have Make..Enjoy!!

Garnish with chopped coriander leaves and the remaining sev. Serve immediately with remaining puris to eat with.
