Introduction: Lentils With Vegetables, Chorizo ​​and Curry

Lentils have a great nutritional value. They stand out for their contribution in terms of carbohydrates and proteins, iron, zinc, magnesium, sodium, potassium, selenium, calcium and vitamins, especially the B complex: such as B2, B3, B6, B9 (folic acid), vitamin A , vitamin E besides being a good source of phosphorus, manganese, and folic acid, without losing sight of the fiber, important to promote intestinal transit and avoid constipation. Low-fat proteins such as lentils and other legumes are very important for our body, not only from the nutritional point of view, but together with their fiber content and satiating potential, makes them a healthier option as well of affordable.

The pottage of lentils and vegetables is a typical dish of Spanish cuisine that is usually made with chorizo. For this recipe, I like to add curry in order to give it an exotic touch.

Ingredients:
- 600g lentils
- 2 onions
- 3 courgettes
- 5-6 carrots
- 1/2 red pepper
- 1 cooking chorizo
- Olive oil
- A lot of water
- A glass of white wine
- A teaspoon of curry powder
- Some salt

Step 1: Making the Stir-fried

First of all, pour the lentils in a bowl with plain water. It is really not necessary to have them soak, but I like to do it in order to wash possible impurities.
Peel and slice the onions in small pieces. In a cooking pot pour some olive oil and heat it (high heat). Once the oil is hot, throw the onions inside and stir.
Peel and slice the carrots in small/medium pieces. Wait until onions are a bit poached and put the carrots in the cooking pot. Stir together.
Do the same with the red pepper. Stir again.
Peel and cut the chorizo in big pieces. Add them into the cooking pot and stir. The mix will look reddish.
Slice the courgettes in medium pieces and add them to the mix. Stir.
Add the white wine, stir and wait until alcohol evaporates.

Step 2: Boiling

Yes, we have now a good stir-fried (do you feel the smell?).
Wash the lentils and add them into the cooking pan. Just add salt, curry powder and water.
Keeping high heat, wait until the water boils (about 15 minutes) and then reduce to medium heat and let it boil for 40 minutes.

Step 3: Serving

Serve it in a deep dish and have it hot. I advise eating it with cured cheese (optional). Enjoy it!
