Introduction: No-Bake Creamy Crunchy Peanut Butter Squares
This is a must-try for peanut butter lovers! No oven, no microwave, no cooker, (almost) no washing up! 3 ingredients (with 2 more optional ones), super easy. They're nutty and rich, but not overly sweet. The texture is very interesting, creamy and a little fudgy and crunchy at the the same time.

120 g (4 & 1/4 oz) Digestive biscuits (or graham crackers or some other cookies)
100 g (3 & 1/2 oz) White chocolate
100 g (3 & 1/2 oz) Crunchy peanut butter
40 g (1 & 1/2 oz) Raisins or sultanas - Optional
1 piece of digestive biscuit & sprinkle of powdered sugar - Optional
Step 1: Put the cookies / biscuits in a bag and break into a mixture of small pieces and crumbs. I just break by hand, like popping bubble wraps, very therapeutic :o). Or you can use a rolling pin.
Step 2: Line a metal baking tray with aluminium foil. I use a loaf pan that has a 20 x 10 cm base. If you wan to make a bigger batch, use a wider tray. In the video, I demonstrated an easy way of lining the pan. Put the white chocolate (break into pieces if it's a bar) and peanut butter in the lined tray.
Step 3: I melt the choco & PB using a hair dryer! It take 3-4 minutes on a medium setting for me. If you don't want to use a hair dryer, you can use the oven instead.
Step 4: A quick stir of the choco & PB. Add the crushed cookies / biscuits. And the raisins / sultanas, if using. Or you can add peanuts or mini chocolate chips. Stir well to combine, take care not to break the foil. Press into an even-ish layer. Totally optional - I crumble over a piece of biscuit and a sprinkle of powdered sugar on top, just to make it look a little prettier :o).
Step 5: Cover and leave in the fridge to set for an hour. Take out of the tray, cut into pieces, and enjoy! Store any leftovers in the fridge (if you don't eat them all in one go, that is).
