Introduction: No Bake, No Wash Up Rocky Road Chocolate Slices

Rocky Road is a simple-to-make treat of chocolate with crushed cookies & marshmallows. My version has extra peanuts and sultanas added. The quirkiness of this recipe is that there is no mixing bowls to wash up! And no microwave, oven, or stove top involved...

Ingredients:

50 g (3 & 1/2 tablespoon) unsalted butter

150 g (5 & 1/4 oz.) dark chocolate

150 g (5 & 1/4 oz.) crushed cookies / biscuits

30 g (1 oz.) mini marshmallows

30 g (1 oz.) peanuts (optional)

40 g (1 & 1/2 oz.) sultanas (optional)

STEP 1:

Line a metal baking tray with decent quality foil. I use a loaf pan that has a 20cm by 10cm base. It's easier to line the tray if you form the foil around the outside first, then ease it into the tray, and gently push into the corners to get a good fit.

STEP 2:

Prepare the cookies by putting them in a large food bag and either break by hand or bash with a rolling pin into small pieces (not completely crumbs). You can use digestive biscuits, graham cracker, crunchy chocolate chip cookies, or something else. Set aside.

STEP 3:

Put the butter and chocolate in the lined tray. It would easier to melt if they're in smaller pieces. No microwave, no oven, no cooker... I use a HAIR DRYER. It takes 4-5 minutes on a medium setting for me. The metal tray can get quite hot, so wear an oven glove. You can use the oven instead if you like.

STEP 4:

To the melted chocolate mixture, add crushed cookies, mini marshmallows, peanuts & sultanas (if using). Give them a good stir to coat everything in chocolate. Take care not to break the foil. Press into an even-ish layer. Cover with plastic wrap and leave in the fridge to set for at least 40 minutes.

STEP 5:

Cut into pieces (make 8 decent size slices) and enjoy!

Left-overs best kept in the fridge.
