Introduction: Not Your Mama's Grilled Cheese

Me? In the kitchen?! If you're anything like me, cooking anything outside of buttered noodles seems a bit too advanced. Today, I faced my fear and ventured into the unknown land of cooking something with actual flavor. For once, I dared to attempt one of the fancy Pinterest recipes I pin but know deep down that I will never make. To my surprise, this blueberry brie grilled cheese was super easy to cook and I will attempt to make these instructions even easier to follow so you can taste this blueberry brie goodness.

Supplies

  • 2 slices of sourdough bread 
  • 1 tablespoon of fig 
  • 1 wheel of brie 
  • 1 cup black and blueberries 
  • 1/2 of a lemon
  • 1 stick of butter
  • 1 bottle of honey 
  • Turner (link)
  • 2 medium sized saucepans
  • Stove

Step 1: Macerate the Berries

Add blueberries, blackberries, and squeeze your lemon to a medium sized, medium heated saucepan. Stir with medium heat on a stove until softened to a compote consistency. You will know this has been achieved when the berries begin producing juice as seen in the image. Take the pan off the stove and turn the heat off.

Step 2: Macerate the Berries

Step 3: Butter Up

Butter 2 slices of sourdough on both sides and add one slice to a buttered, hot pan

Step 4: Fig It Up

Spread your desired thickness of fig onto one of the slices of bread.


Step 5: Brie Time

Cut a wheel of brie in half vertically.

Step 6: Slice the Brie

Cut parallel to that cut twice, once on either side of the middle slice, to create 2 long, rectangular slices of brie that will cover the height and width of the bread.

Step 7: Throw It On

Add the 2 slices of brie on top of the fig.

Step 8: Throw 'em On

Add the berries on top of the brie.

Step 9: Sandwich Time!

Add the other slice of buttered bread on top of the berries to make a sandwich.

Step 10: Make It Golden

Flip the sandwich and cook on medium heat until both sides of bread are golden. Press down on the bread with a turner to compress into an easy-to-eat sandwich.

Step 11: Almost Time to Eat

Carefully remove the sandwich onto a plate that brings you joy.

Step 12: The Finishing Touch

Drizzle your desired amount of honey on top of the sandwich.
