Introduction: Olympic Rings Party Pizza

With the 2012 London Olympics right around the corner, I wanted to create a fun game day food to be shared by all. The five Olympic rings represent the five continents that participate in the games. They are represented here with Purple potatoes, black olives, peppadew peppers, yellow squash and broccoli. Of corse, you should substitue whatever ingredients you like best on pizza. 

Ingredients:

Pre-heat oven to 450 degrees

2 purple potatoes- washed and scrubbed

1 yellow squash- washed

1 can of black olives

1 bunch of broccoli- washed

1 jar of peppadew peppers or 1 tub cherry tomatoes

kosher salt

2 cups freshly grated mozzarella cheese

2 tbsp olive oil

1 pizza dough or crust

mandoline 

pizza stone


To make the pizza, thinly slice the purple potatoes and yellow squash with the mandoline. Make sure the slices aren't too think or they won't cook through in the oven before the cheese melts. Sprinkle the potatoes and squash with a little salt. 

Next, slice the stems of the broccoli and break the tops into little pieces. Thinly slice the black olives. Lightly brush the pizza stone with olive oil and place the pizza crust on top of the stone. Brush the pizza crust with olive oil. 

You are now ready to assemble your pizza. Start with the potatoes. They will take on a bluish color once baked. Layer one potato onto the next creating a circular ring. Next assemble the olives and the peppers. For the bottom rings, assemble the yellow squash into a ring, layering one piece on top of the next. Finish with assembling the broccoli into a ring shape next to the squash. 

Lightly brush the potatoes, squash and broccoli with olive oil. Sprinkle them with a dash of salt. 

Bake in the oven for 15-20 minutes, until golden brown and the cheese bubbles.
