Introduction: One Pot Chicken Chili Salsa Verde

Today I'm going to show you how to make a tasty, low-calorie dish that can be made in a single pot.

This recipe calls for that leftover chicken in the fridge that everyone wonders, "Hmm, what can I make with this?"

Not only do you get to use up that chicken, but this dish is also very budget-friendly. You can gather the rest of these ingredients either from stuff in the pantry or for only a few dollars at the grocery store.

If you make this dish for your family it will feed 3-4 people.

If you prefer a burrito, then simply use only half of the chicken broth, that way it won't be so soupy.

Supplies

  • Leftover Fully Cooked Chicken from the fridge ( I used one very large grilled breast)
  • 1 jar of La Victoria Salsa Verde
  • 1 cup of low sodium chicken broth
  • 1 can of black beans, drained and rinsed
  • 1 can of diced green chillis
  • 2 large ears of corn, may use canned or frozen as well
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • Shredded pepper jack cheese
  • Sour cream (I mix cayenne into it for added heat)
  • Lime slices
  • Tortilla chips or flour tortillas

Step 1: Shred Your Chicken

The first thing to do after gathering your ingredients is to shred your chicken. I prefer to shred it, but you can make yours into chunks if you like. Once the chicken is shredded add to your pot.

Step 2: Add the Remaining Ingredients

Add your rinsed black beans, salsa verde, broth, green chilis, corn cobs, & the seasonings. You want to give it a good stir, make sure its all mixed up well. Bring your pot just to a boil then immediately reduce heat to low, cover and cook for additional 10 mins. Stirring often.

Step 3: If You Like a Little Heat Use Cayenne!

Now, while your dish is simmering, prepare to serve your meal. My husband and I like spicy so I mix the sour cream with the cayenne, I don't add it to the entire pot because my daughter hates sour cream and spicy. This way everyone can eat, without any hassle.

Step 4: Serve It Up!

Once your timer goes off, turn off the stove and allow to cool for 5-10 mins. Serve your meal with a bit of shredded pepper jack cheese, a lime wedge, a dollop of sour cream, and of course the tortilla chips! I think the chips are a must-have with this dish, I like to break them into pieces and toss them right into my bowl. Be careful it's hot!
