Introduction: Oreo Stuffed Cupcakes - 2 Ways

Ingredients:

175g self raising flour, 175g butter, 120g sugar, 1tsp vailla extract, 4 tsp cocoa powder, 40g melted chocolate, Oreos (golden, original, strawberry), Oreo Icing

Step 1: Step 1: Creaming

In a large bowl

Cream the butter until light and fluffy. Once creamed, add in your sugar and beat well. It should be pale: light and fluffy.

Step 2: Step 2: Flavouring

Add in the vanilla extract, and incorporate.

Step 3: Step 3: Eggs

Add in your eggs and beat well. Now you may call my method lazy, but it certainly is efficient! Double egg crack! (lol). If you please, crack in the eggs one at a time beating between each addition. Set this bowl aside.

Step 4: Step 4: Dry Ingredients

Into another bowl, add in your self raising flour. To that mix in 1/2 tsp of baking powder and 1/4tsp of corn starch.

Step 5: Step 5: Combine Dry and Wet

To the large bowl, pour in the dry ingredients - you can also sift it in. Mix half way with a whisk, then change to a spatula until smooth and easily glide-through-able(?)

Step 6: Step 6: SPLIT & MIX

Now to make this recipe into 2 ways!

Do you fancy a chocolate Oreo stuffed cupcake? Separate your mixture into two bowls.

To one bowl, add 4 tsp cocoa powder and 40g of chocolate. Mix really well. Leave the other bowl as is.

Step 7: Step 7: Fill Cupcake Liners

Using an ice cream scoop (for equal results) scoop your Vanilla batter into half the cupcake liners (I used brown for contrast) and Chocolate batter into the other cupcake liners (I used white, again for contrast).

Then, take an Oreo. The colour of the Oreo should oppose the colour of the batter. For the Chocolate batter I used the Golden Oreo, for the vanilla batter, I used Strawberry Cheesecake and the Original Oreo. Press the Oreo into the filled cupcake liner.

After, scoop some more batter over the top, to somewhat seal the Oreo in and protect it from burning in the oven.

Step 8: BAKE

Bake at 180 degrees Celsius (covert to Fahrenheit if need be)

for 15 - 25 minutes

or

until a toothpick inserted into the centre comes out clean.

LEAVE TO COOL COMPLETELY BEFORE ICING.

Step 9: Ice and Serve!

There you have it! Don't they look delicious? Enjoy!

A tip to serve: break an Oreo in half and press it into the icing for a cute finish!

    3 ways. Substitute powdered peanut butter for the cocoa. I used chocolate Oreos. My kids love them.

    I bought 2 jars of the stuff because I had never heard of it. Since them I have seen it at several different stores. I am still looking for different opportunities to use it.

    I am getting hungrier by the minute. Seems easy enough to do with kids. And so yummy looking. Gotta try it soon.
