Introduction: Over the Top Triple Bacon Deviled Scotch Egg

It's always been a guilty pleasure of mine that when I find a new dish I think of other dishes I can combine it with, my German friend tells me it's American thing. So only naturally after the first time having a scotch egg all I could think about was the best way to cross it with my aunt's amazing bacon deviled eggs, this is that project. Even though it was quite a mission it was all worth it, because it has far surpassed any expectations I had. Okay let's it started.

Step 1: Supplies

Stuff you will need:

-18 eggs. Just to be safe

-Eggies Shellless egg makers. You can get these on eBay or Amazon

-Two packages Jimmy Dean bacon lovers sausage, unformed

-1 pound of bacon. That's more than will need but you can eat the rest while making the eggs

-Panko breadcrumbs, unseasoned

-1 lemon


-Yellow Mustard

-Stone Ground Mustard

-Relish, sweet or dill, whatever



Step 2: Where We Should Always Start

While going through a crazy ketosis cycling diet I quickly learned the best and easiest way to cook bacon, bake it! I put the bacon in a sheet pan in a 400° oven for 17-20 minutes, you don't have to babysit it, it's really pretty foolproof in my opinion and you can easily drain off the fat for further on in the project as well as for just about any cooking experiment.

Step 3: The Eggs

Separate the yolks from the egg whites by either using the tool that came with the Eggies or your hands or any other new method you find fancy. I use my hands but I also demonstrated using the Eggies tool. I do this over one bowl and then transferred to two other bowls. This way if the yolk broke I wouldn't have to worry about contaminating either the whites or the yolks. Set the the whites aside and poach the yolks in near boiling water for 10 minutes, scoop them out with a slotted spoon and onto the next step.

Step 4:

Everyone has got their favorite way to make deviled eggs, but this is the way that I make them.

-Nine egg yolks

-1 1/2 Tbs of Mayonnaise

-1 Teaspoon of Stone Ground Mustard

-Tablespoon relish

-One Green Onion Chopped Up

-1/2 Teaspoon Paprika(smoked or regular)

-a squirt of yellow mustard

-a gratuitous amount of chopped up bacon

-the juice from one squeezed lemon

-salt and pepper to taste

If these were real deviled eggs I would add a larger amount of mayonnaise but I cut down the amount because of the purpose and I figured it would stick together better. Put all ingredients in a bowl, mix excessively. Put in fridge to chill for 20 minutes. Pull them out spoon a small amount into the palm of your hand and gently roll into yolk size balls. Try to handle as little as possible to keep from melting. Place them on a plate and put them back in the fridge to chill. Onward and upward.

Step 5: Eggies!

I'm not going to pretend like these things are amazingly easy to use, that is not the case, but I know of no other way to fulfill this dream. Make sure you spray down the Eggies with cooking spray and also make sure you put them into warm water and then bring to boil otherwise they have a tendency to explode. This tendency may happen all the time, who knows. I used a zip top bag and cut the corner off so that I could easily pipe egg whites into the containers. Personally I thought it was ingenious. My eggs were obviously smaller than the eggs they recommend using because I do use quite a few extra eggs to fill the molds. This is why I recommended starting with 18 eggs. Put a little egg white in the bottom of the mold and through in one of the pre-made deviled yolks screwed the lid on, filled the mold to the top and screwed on the final lid. This was a slightly messy process as you can probably see by my cutting board. Boil as recommended. 10-15min. Now things are slowly looking the way they should.

Step 6: Breading

This is obviously far too many pictures of Panko breadcrumbs but hey some people love breadcrumbs. Throw the bacon fat in the pan maybe not all but most of it, bring up to medium-high heat and throw in the Panko breadcrumbs, if you make too many you can use the rest for another project like ice cream toppings. Constantly stir breadcrumbs because they will brown very quickly in the bacon fat. Once they are a good light brown color then set them aside in a shallow wide plate and let them cool. Boom.

Step 7: The Light at the End of the Tunnel

Preheat oven to 400°F(205°C).

-Plate of Panko breadcrumbs that were cooked in bacon fat(in retrospect you could add bacon to the breadcrumbs also for some green onions)

-Bowl of egg wash(egg whites, splash of water, tablespoon ground mustard)

-Plate of all-purpose flour

Set up three bowls as shown with the sheet pan covered in oil next to the breadcrumb side. I'm left-handed so it might be easier for you to work left to right instead of right to left but anywho. Pull the eggs of the molds being very careful I found squeezing the mold slightly helps dislodge them. If there messed up still use them they will be covered by the end of this step anyways.

The small handful sausage and flatten on the palm of your hand, place a magic egg on it and gently wrapped the sausage around the egg. This may seem very difficult at first but when you finally get most the sausage around the egg and roll the sausage between your hands lightly, they actually come out quite nice. Once the egg is complete covered, roll in the flour, then the egg wash, and then the breadcrumbs and set on the sheet pan. Continue these steps with the rest the eggs and place in the oven and cook for 16-18 minutes or until sausage is cooked through. Annnnnnd

Step 8: YOUR DUN!!!

Sit back and enjoy your creation by yourself, take it your best friends house and share, or take your enemies house and don't share. Trust me it will blow people's minds. Enjoy!
